How snapshots are taken
Automatically, in the background. There's no "save" button to remember.
A new snapshot is captured roughly every 30 minutes, and again after a burst of 200+ characters of changes.
Both documents and tables are covered.
How long history is kept

When a snapshot ages past your plan's window, it's removed automatically.
Restoring a version
Open the resource's History from the version menu.
Browse snapshots by timestamp and preview each one.
Restore to roll the document back to that point.
Because a published page always reflects the latest saved version, version history doubles as your safety net for public docs — restore a good version and the public page updates with it. See Publishing for how the live view works.
